Why THOMPSON St Albans?
Phil Thompson, Head Chef and owner previously held a Michelin Star for 4 years, before establishing his own restaurant in Nov 2013. As a team we are literally ‘gunning’ to regain that Michelin star at THOMPSON St Albans and we have recently been given a Michelin plate displayed outside the restaurant, to say Michelin are watching us! November 2017 saw us gain 3 AA Rosette status. Other awards we have won include St Albans Chamber of Commerce – Best Restaurant Award, Hertfordshire Life – Best Restaurant and Best Chef and St Albans Food & Drink – Best Restaurant for a Special Occasion.
We believe in progression from within, training and mentorship, offering a good basic salary, performance-related bonus, cash tips and TRONC / service charge on top. We are closed Sunday night, all day Monday and Tuesday lunchtime, and you will also receive another day off each week.
We have a great team and strong family ethos; everyone works hard, with much help and support for each other along the way, regular staff socials and team drinks in The Cock pub next door at the end of the week. We are an independent restaurant, make quick decisions and constantly look to reinvest in our restaurant.

You will run the kitchen, able to cover all sections, ensure the team are ready for service, end of day orders and next day mise en place is well organised with through planning, contribute with A la Carte and Tasting Menu ideas. A minimum of 1 years’ experience, working as a Sous Chef in a 3 AA Rosette kitchen, basic hygiene, health and safety qualifications are required. Good basic, bonus, TRONC and cash tips.
Pastry Chef de Partie
With a friendly, enthusiastic, hardworking nature, honest, committed and reliable, with a positive working attitude, you will have a minimum of 2 years’ experience working in 2/3 AA Rosette kitchen, basic hygiene, health and safety qualifications.

With an eagerness to learn and hardworking attitude, you should have NVQ level 1 or 2, or equivalent and basic food hygiene awareness. Experience in a 2 / 3 AA Rosette kitchen and knowledge of seasonal ingredients is desirable.
