It’s Springtime at THOMPSON St Albans
Springtime is an exciting time of year for all of us with so many signs of new life, wonderful and vibrant colours. See why Phil Thompson loves spring and what beautifully fresh and seasonal ingredients are on offer on the THOMPSON St Albans Spring menu.
What Springtime Means to Me
I love the spring season. Just take a look at what I got up to last spring! I get particularly excited about all the mushrooms that will be coming through the kitchen door, especially Morels. These are a beautiful, soft, flavoursome mushroom, which when gently cooked in a tiny bit of butter, add great luxury and depth of flavour to a dish.
Peas, asparagus, spring onions and radishes make for exciting salads, and going to the allotment on my morning off to see what my father-in-law, John has for me to share with you, is the perfect way to relax. My next day at work is all about talking to the chefs, showing them my wonderful produce, sharing their joy and excitement at what I have just picked that day and discussing what we can cook with it.
Interesting fact: Did you know that it takes 3 years after sowing for the asparagus seed to harvest, but after this it can be cropped every spring, for more than 15 years?
Spring menu at THOMPSON St Albans
Springtime is an exciting time of year for food enthusiasts, especially if you like to grow your own, as we do here at THOMPSON St Albans! Spring flavours are light and refreshing – especially when the food is served straight from the plot, with minimal food miles. That’s why our spring dishes taste so amazing – they’re all produced using the freshest seasonal spring ingredients, with fruit and veg grown on John’s allotment. If you love purple sprouting broccoli, spring onions, asparagus, radishes, peas and rhubarb – not forgetting the beautiful Jersey Royal potato – it’s definitely time to book a table to sample our spring menu.
What’s new on the menu this season
In winter, it was all about root vegetables and braised meats – hearty fare to keep us warm through those dark, cold months. As we leave all this behind to enjoy the joys of spring, it’s time to indulge in wonderful fresh vegetables, clean flavours and succulent spring lamb.
At THOMPSON St Albans we invite you to come in and enjoy all the exciting dishes on our new spring menu! Our à la carte offerings include sensational Wye Valley asparagus, yoghurt and mint roast lamb loin, and poached Cornish brill served with seasonal crème fraiche leeks. If you can’t decide what to go for, why not experience the best of our new and exciting dishes, with our 7-course Tasting Menu?
