Springtime is an exciting time of year for all of us with so many signs of new life, wonderful and vibrant colours.  See why Phil Thompson loves spring and what beautifully fresh and seasonal ingredients are on offer on the THOMPSON St Albans Spring menu.

What Springtime Means to Me

I love the spring season. Just take a look at what I got up to last spring! I get particularly excited about all the mushrooms that will be coming through the kitchen door, especially Morels. These are a beautiful, soft, flavoursome mushroom, which when gently cooked in a tiny bit of butter, add great luxury and depth of flavour to a dish.

Peas, asparagus, spring onions and radishes make for exciting salads, and going to the allotment on my morning off to see what my father-in-law, John has for me to share with you, is the perfect way to relax. My next day at work is all about talking to the chefs, showing them my wonderful produce, sharing their joy and excitement at what I have just picked that day and discussing what we can cook with it.

Interesting fact: Did you know that it takes 3 years after sowing for the asparagus seed to harvest, but after this it can be cropped every spring, for more than 15 years?
